I have mentioned before that I don't love lunch time. It's hard to find the time and the motivation to prepare a healthy lunch and actually sit down to enjoy it. Realistically, I am usually running around taking care of my kids.
That is why I wanted to share some easy, healthy lunch ideas that I have really used. They take very little prep work and they offer some much needed energy to avoid the afternoon slump. It is my busiest time of day.
3 Healthy Lunch Ideas
This bagel sandwich was kind of a surprising find. I literally only had a minute to put together something to eat. Though this may not be the healthiest option, it was better than anything else I could have grabbed with only a minute to prep.
I took an asiago bagel and cut it in half. Then I spread on a light coating of blueberry cream cheeses (it was all I had). Then I put a slice of deli ham on and it was done. The sweet cream cheese was actual a nice compliment to the ham and bagel.
Because it tasted so good I decided to snap a picture so it's not the best quality. This is a good sandwich though and I'd love to hear your thoughts if you try it.
This was another quick, healthy lunch that was created in the attempt to quickly eat (basically stuffing food on the run) into my mouth while I was trying to do about ten other things at the same time.
The base of this lunch is a leftover sweet potato from dinner the night before. Then I put a little bit of taco meat on top and some avocado and tomatoes. I also topped it with a little bit of ranch to balance out the spicy meat.
I was pleasantly surprised at the combination of flavors and variety of vegetables/fruit that I was able to throw together in a matter of minutes. Who says that fast food places are really that fast? I think it's possible to make your own food at home just as quick and it will almost always taste better.
I eat whole grains in almost every kind of carbohydrates that I eat. Tortillas are the one thing that I have never been able to find a great tasting whole wheat or whole grain tortilla. I figure that with all the other healthy ingredients in this wrap, a white shell isn't going to tip the scale into classifying this as unhealthy, so I'm going with it.
The longest part of this meal was making the fresh guacamole. Then it was a matter of throwing in some lettuce, cheese, onions, olives, and tomatoes (all leftover from the night before). I topped it off with a nice dose of guacamole and rolled it all up.
Wraps are a great way to use up leftovers and to give a little extra nutrition to this meal that would not have been quite filling enough for me without the wrap.
